Two Kinds of Mayo Sauce
Cindy's note: These were both in the April '05 issue of Bon Appetit. They're quick, easy and delicious, and are good accompaniments to chicken, fish and veggies.
Cilantro-Lime Mayonnaise
Makes 1 cup.
1 cup (packed) fresh cilantro leaves
3 T. fresh lime juice
1 garlic clove, peeled
1 t. Dijon mustard
1/4 t. hot pepper sauce
3/4 cup mayonnaise
Blend first 5 ingredients in processor until cilantro is finely chopped. Add mayonnaise and process just to blend. Transfer to small bowl. Season with salt and pepper. (Can be made 1 day ahead; cover and chill.)
Dill-Cucumber Sauce
Makes 2 cups.
1 1/3 cups (packed) coarsely chopped fresh dill
1 cup 1/2 inch cubes unpeeled cucumber
1 1/2 T. minced shallot
1/4 t. cayenne pepper
3/4 cup mayonnaise
3/4 cup sour cream
Blend dill, cucumber, shallot, and cayenne pepper in processor until cucumber is finely chopped; transfer to medium bowl. Whisk in mayonnaise and sour cream. Season with salt and pepper.
