Tangy Dilled Cucumbers

Cindy's note: These are sweet yet tart, and make a light side salad in the summer.

1 unpeeled cucumber, sliced very thinly
3 T. honey
1/2 cup red wine vinegar
1/4 cup chopped dill

Combine honey, vinegar and dill in small saucepan over medium heat. Simmer for five minutes. Pour over sliced cucumbers; place in fridge and chill. Will keep up to a week.
