Caramelized Citrus Fennel

1 fennel bulb, top removed, sliced into strips about 1/2 inch wide
1 cup orange juice
3 cloves garlic, coarsely chopped
4 T. olive oil
1/4 cup dried cherries

Place fennel slices in medium bowl. Drizzle 2 T. of the oil on top, scatter garlic around and pour in orange juice. Mix briefly, cover, and refrigerate 1-2 days.

Heat remaining olive oil in a medium frying pan over high heat. Remove fennel from marinade and add to pan when oil begins to smoke. Do not stir for approximately four minutes, allowing the fennel to caramelize. Remove pan from heat, allow to cool briefly and add approx. 4 T. of water, taking care to avoid the steam that will arise from the pan. Return to medium low heat and simmer for ten minutes, or until fennel is slightly softened. Add leftover orange juice marinade and dried cherries to pan, and simmer over low for five more minutes.

Serve fennel with sauce drizzled on top.
